I would give, say, $100 in small denominations (like $5 or so), and fold it into origami shapes, as someone else suggested. If I wasn’t that skilled, I’d get someone to do it for me. You could make a money tree by folding different dollar bill denominations into leaves and hooking them onto a branch. Or you could fold the dollars into origami flowers and make a bridal bouquet out of them. Speaking as a current bride-to-be, though, I would be very touched and grateful for a gift from my aunt in any form- and if it was a money gift I would probably prefer something a little less cumbersome than a money tree, like, say, a check inside a sweet card.

We are trying to figure out what color the bridesmaids bouquets should be for a Spring wedding. The bride's bouquet will be red and white roses exclusively. She does not want the bridesmaids to have roses because of the cost. The bridesmaids dresses are

I would try and move the bride to an all-red bouquet for impact and the girls with small posies of all white. These could be roses, lilies, freesia, carnations, lysianthus, even hydrangea.
